It&#8217;s time for another rendition of The Sippin&#8217; Chef, where we take you into our kitchen to try to add a little something new to your culinary repertoire (or at least give you an excuse to sip some delicious wine while you poke at things in the pot). With no further ado, here&#8217;s our take on tacos al pastor + Merlot.<\/p>\n<figure><figcaption><\/figcaption><\/figure>\n<h6><img fetchpriority=\"high\" decoding=\"async\" class=\"aligncenter wp-image-41368 size-large\" src=\"http:\/\/202.131.107.107\/sj\/keenanwinery\/wp-content\/uploads\/2023\/01\/pexels-los-muertos-crew-8448069-scaled-e1675196797255-1024x729.jpg\" alt=\"Recipe for tacos al pastor paired with merlot\" width=\"800\" height=\"570\" srcset=\"http:\/\/202.131.107.107\/sj\/keenanwinery\/wp-content\/uploads\/2023\/01\/pexels-los-muertos-crew-8448069-scaled-e1675196797255-1024x729.jpg 1024w, http:\/\/202.131.107.107\/sj\/keenanwinery\/wp-content\/uploads\/2023\/01\/pexels-los-muertos-crew-8448069-scaled-e1675196797255-300x214.jpg 300w, http:\/\/202.131.107.107\/sj\/keenanwinery\/wp-content\/uploads\/2023\/01\/pexels-los-muertos-crew-8448069-scaled-e1675196797255-768x547.jpg 768w, http:\/\/202.131.107.107\/sj\/keenanwinery\/wp-content\/uploads\/2023\/01\/pexels-los-muertos-crew-8448069-scaled-e1675196797255-1536x1094.jpg 1536w, http:\/\/202.131.107.107\/sj\/keenanwinery\/wp-content\/uploads\/2023\/01\/pexels-los-muertos-crew-8448069-scaled-e1675196797255-600x427.jpg 600w, http:\/\/202.131.107.107\/sj\/keenanwinery\/wp-content\/uploads\/2023\/01\/pexels-los-muertos-crew-8448069-scaled-e1675196797255.jpg 1708w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><\/h6>\n<h3>Ingredients<\/h3>\n<ul>\n<li>2 lbs pork tenderloin<\/li>\n<\/ul>\n<p>Marinade<\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\">4 cloves of garlic, minced<\/li>\n<li aria-level=\"1\">1 tsp oregano, dried<\/li>\n<li aria-level=\"1\">1\/2 tsp, cumin<\/li>\n<li aria-level=\"1\">1\/3 cup pineapple juice<\/li>\n<li aria-level=\"1\">1\/4 cup white vinegar<\/li>\n<li aria-level=\"1\">2 tbsp achiote paste (or you can substitute harissa)<\/li>\n<li aria-level=\"1\">2 canned chipotle chile peppers (note that it&#8217;s 2 peppers and not 2 cans!)<\/li>\n<li aria-level=\"1\">Salt &amp; pepper, to taste<\/li>\n<\/ul>\n<p>Fixin&#8217;s<\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\">6 small white corn tortillas, grilled (or heated)<\/li>\n<li aria-level=\"1\">lime wedges (to squeeze over just before serving)<\/li>\n<\/ul>\n<p>Salsa<\/p>\n<ul>\n<li>1\/2 red onion, diced<\/li>\n<li>1 small jalape\u00f1o, seeded and diced<\/li>\n<li>1 tomato, diced<\/li>\n<li>3 rings of canned pineapple, diced<\/li>\n<li>handful of cilantro, chopped (fresh)<\/li>\n<li>1\/2 lime, juiced<\/li>\n<li>Salt, to taste<\/li>\n<\/ul>\n<h3>Steps<\/h3>\n<ol>\n<li>Preheat your oven to 350\u00b0F. Butterfly slice your pork without slicing all the way through. Open up and press flat inside a large ziploc. Set aside.<\/li>\n<\/ol>\n<ol start=\"2\">\n<li>In a medium saucepan, combine the achiote paste, spices, vinegar and pineapple juice. Bring to a boil, stirring to combine. Blend with a hand mixer or use a food processor to mix until smooth. Let it cool completely. Pour the cooled sauce into the bag and over the pork. Seal &amp; refrigerate for at least 1 hour (or up to 24).<\/li>\n<\/ol>\n<ol start=\"3\">\n<li>Meanwhile, prep the salsa by mixing the ingredients in a bowl. Cover and set aside.<\/li>\n<\/ol>\n<ol start=\"4\">\n<li>Line a baking sheet with aluminum foil. Place the pork, pineapple rings and onion under the broiler (about 6 inches away from the heat). Cook until cooked through. You&#8217;ll probably want to pull the pineapple and onion out earlier or they&#8217;ll burn.<\/li>\n<\/ol>\n<ol start=\"5\">\n<li>Heat your tortilla shells, spoon in the pork, pineapple and onion. Top with salsa and spritz off with a bit of fresh lime. Voil\u00e0!<\/li>\n<\/ol>\n<p>And that&#8217;s it. But be warned: Once you try this recipe, you&#8217;re done for. Don&#8217;t forget to pair these tacos al pastor with your favorite Merlot!
